Strawberry Spinach Salad Recipe

Here in Florida (Online Vacation Center’s home base), winter is not only the perfect season to cruise but also to grow crops! By the beginning of Spring, strawberry and spinach fields have reached their peak harvest, and tons of the delicious fruit & leafy greens make the short commute to local grocery stores all over our state.

They also happen to go perfectly together in a salad, which is the inspiration for this month’s recipe. With the cruise industry trending to use more locally sourced ingredients, chances are that the refreshing salad starter you’ll enjoy on your next winter cruise from Florida grew not too far from port!


Strawberry Spinach Salad with Vinaigrette
(yields 6 servings)

  • 10 oz fresh baby spinach
  • 1 lb fresh strawberries, hulled and sliced
  • 4 oz crumbled feta (or goat) cheese
  • 3/4 cup of chopped nuts (walnuts, pecans, or slivered almonds)
  • 1/3 cup of extra-virgin olive oil
  • 2 tablespoons of red wine (or raspberry) vinegar
  • 2 teaspoon of dijon mustard
  • 1 teaspoon honey
  • salt (to taste)
  1. In a small bowl, whisk together honey, Dijon mustard, vinegar, and olive oil until well blended. May add salt to taste.

  2. Place the spinach in a large bowl, adding strawberries, cheese and nuts. Drizzle the dressing over the salad, toss and serve.
